I have always loved trying and tasting different foods, whenever I have been on holidays in different countries I have always tried their local dishes. Now I have the chance of becoming a rockstar in the kitchen at the greatest cookery school in the world. If passion, drive and enthusiasm are key parts in the make up of a chef I'm halfway there! To sum up a brilliant quote of T.V Chef Giorgio Locatelli which we need to shift to in Ireland to "the Italians live to eat, we eat to live".

My dish is panfried duck with spicy pui lentils and hot cherry sauce. The richness of the duck goes very well with the earthy lentils combining coriander and chilli and a hot cherry sauce with the sweetness offset with a nice chilli kick giving the dish great balance. Pretty much a classical cooked duck breast with an asian flavour
