It truly is my dream to study in Ballymaloe. I am 30 soon & they say 30 is the new 20... So I am grabbing my refound 20’s by the meatballs & going to follow my dream! Food is something I think about from the moment I rise till my head hits the pillow! If my head isn’t in a cookery book, I am on the net searching for new & exciting recipes, or glued to some cooking programme on TV! It is my passion...I want to turn this passion into a career & bring the food revolution from Cork to Leitrim!

This is my signature dish! It has been 5 years in the making but it has now developed into what my friends and family call their meatball moments when they eat it! This dish is just so versatile; its perfect to feed 2 to 20, great with pasta, mash or crusty bread. Every bite there is a new and different flavour, fresh basil & juicy tomatoes. A few secret ingredients… oh and of course that splash of Irish Passion! The proof is in the eating and second helpings are always a must with my meatballs!
