I feel that I should win CHEFFACTOR -Firstly because my dish is absolutely delicious! and Secondly, my ambition is to be a professional chef before pursuing my dream to open a cafe. I feel The Ballymaloe Cookery Course will give me the confidence and experience to make this happen. I love cooking, food is definitely my passion, and I spend a lot of my time looking for new recipes and trying them out on family and friends. I would really like like to expand this hobby into a career.

My Mediterranean masterpiece is a smooth and creamy risotto with pork sausage, spices, roasted cherry tomatoes, peppers and samphire.
It is a delicious Italian risotto with some punchy Spanish flavours added to give it a fiery twist. The risotto is comforting and moist, containing roasted vegetables with a subtle spiciness to make your mouth water, finished off perfectly with parmesan shavings. Spices include cumin, chilli and paprika. Best enjoyed al fresco with a glass of white wine!!
