Myrtle Allen’s dog eared cookbook was passed to me by my grandmother,a Home Economics teacher who ignited in me a love of cooking.In her world everything was made with local ingredients and she instilled in me an ethos of good food,made properly. I would love and appreciate the chance to develop the passion she gave me.The opportunity to gain such a wide range of skills would be a dream come through.

The pudding was the inspiration for my dish after I tasted it at the pudding awards in Kanturk.I fell in love with its creamy,rich texture and wanted to come up with a something that would incorporate it and other fresh,local produce.I have used the very best ingredients;gold medal award winning black pudding from McCarthy's of Kanturk,fresh roasted tomatoes,mixed leaves, parmesan shavings,mushrooms,onions and white wine.The result is amazing-a dish which is rich in texture, colour and flavour

I really hope you win. The dish looks and sounds amazing. How orignal to create a Risotto with a traditional twist like black pudding to make a really contempary creation. This requires true imagination and is exactly whst Cully and Sully should be looking for.

How refreshing to see an orignal dish using some of Irelands finest ingredients. I am familar with Mc Carthys black pudding and can only imagine how divine it tastes.
