Being a chef has been a dream of mine for as long as I can remember. I can still recall watching Darina Allen on RTE years ago as a child and wanting to be just like her. Working in the pastry kitchen in Scoozi's at 16 assisting the pastry chefs was the best job I ever had and since then I knew that being a top pastry chef would be my dream job. To see the smile on peoples faces when they enjoy my food is the great feeling in the world and I want to learn from the best to be the best.

I've searched for the perfect chocolate cake recipe for years and recently I've found it. The cake batter has sour cream in it which helps give it a lovely moist texture and I use organic cocoa powder for ultimate chocolatey flavour. The icing consists of dark chocolate with at least 74% cocoa and golden syrup which helps keep it soft and smooth. Top quality Madagascan vanilla extract is used in the batter and the icing. This cake has been a great hit at work and I've even sold one to a friend!!
