A year ago after travelling the world I returned home to the recession. While job hunting I decided to do a month long cookery course and this was invaluable to me. It has driven me to learn all I can, try new things and experiment in the kitchen. I’m an accountant but my passion is food and it would be a dream come true to get the guidance and experience of the Balllymaloe course and its chefs. This could be a life changing opportunity and I’m ready to grab it with both(oven gloved)hands. Maria

Hi Cully and Sully! My dish is a delicious slow braised rolled pork belly on a bed of apple and calvados sauce with sweet potato puree, roasted winter vegetables (carrots, beetroot, parsnip) and colcannon. All of my ingredients were sourced locally and my vegetables were all bought at the local farmers market. Like Cully and Sully I like my food to be Irish, warming and tasty and this is why I love this dish in these colder months! IT’S YUM and I hope you like the pic.
