I have always been interseted in cooking ever since I was young from watching the very early celeb chefs on tele to helping my parents cook dinner after school.
When I moved to Ireland 13yrs ago and had my own place I started cooking for friends, and enjoy the positive feedback I get.
Winning this competition would be amazing.Great to spend days doing something I love.The opportunity to learn from professional would be a dream come true.It could be the cataylst to making a career change

This is sililiar to a dish Mum cooked when i was growing up in Jersey.Where she would use salted cod,I bake mackerel.It is a very simple tasty dish which my children adore.
This dish is simple to assemble.Chickpeas are soaked overnight. Boil potatoes and bake the seasoned mackerel while you are simmering the chickpeas.Once cooked toss potatoes,chickpeas with a vinegarette, parsley,garlic and shallots dressing,which can be made at the very last minute.
Serve hot, but just as nice cold

this is the most unbelievable creation you will ever have tasted. I think it is Mike's flair that really brings out the authentic flavours in this dish. Mike , as you can see, is a bit of a dish himself so my vote goes here.
