I believe that happy & successful cooking comes from the heart, makes great demands on the palate & needs enthusiasm & a deep love of food to bring it to life. Food is one of the single most significant trademarks of a culture & for me Irish food and culture is so fresh & local. I take pride in using seasonal produce. For me cooking is a passion for life that makes my appreciation & love of food something that I can share. This prize would be literally be a dream come true!
You have 500 characters to tell us about your dish:
For my dish I wanted to cook something simple. I used a fillet steak, red onion, parsnips, carrots, peas and potatoes. I diced the carrots parsnips and potatoes I then cooked then in stock and allowed them to cool and then fired them. The steak I just pan fried with salt pepper and olive oil. The onion I put in the oven and drizzled with balsamic vinegar. I finely diced the carrot and parsnip and fried them and then used them as the garnish over the steak.
