I love cooking.Ive gone from pretending to be Darina Allen when I was young to studing food in DIT.Food Hampers,Wedding Cakes,Chutneys, Lemonades and Curds. Im making my hobbie into my career,which is the dream for me!Looking into my final year of college Im wondering which direction to go.The Ballymalloe course is the next step for me!

Im always experimenting with new ideas. In this recipe I tried out my most recent idea, incorporating the carrot not only in the carrot cake but also in the icing itself. This not only gives the carrot cake a new twist but allows the gorgeous natural orange of the carrot to shine. I adapted 'Aunt Florences Orange Cake' from the Ballymalloe Cookery Course Book. Adding carrot, walnut and white chocolate to the base recipe and smothering with the carrot and vanilla creamcheese icing!

Please keep me in mind for this fantastic opportunity, Im studying Culinary Arts in DIT and in my final year now. Baking is not my forte but maybe with a bit of help from BallyMalloe it could be.
