I absolutely love cooking!! It is the most relaxing and wonderful thing in the world! to take a few random ingredients and come up with a something to put on a dish that brings the touch and flavours of home in every bite is fantastic! I love experimenting with different flavours and ingredients so it would be a dream come true to win and be able to learn more about food and cooking at Ballymaloe!!

This stuffed peppers are my take on an very traditional Mexican dish with available ingredients in Ireland. The slow rosted peppers are stuffed with a combination of mince pork & beef, dried fruits, nuts, fresh fruits, vegetables and herbs. They are served with a peacan sauce and Mexican red rice! They are absolutely delicious and all my Irish friends and family loves them!

I have had the pleasure of tasting Lily´s cooking a couple of times. Every time, she would cook something completely different and I can´t still make up my mind of what dish was more delicious.
She is not only a chef that can cook very refined and elaborate dishes, but also one that can add the necessary ingredients and special touch to remind you about home.
Lily absolutely adores being in her kitchen. she sees this as a wonderful pastime can he can share with other people.
I am certain that she has the capacity to be a great chef and I do hope she follows that pad!.

Lily's food is great, it's awsome she can create this delicious disdhes I think it isn't easy to get all the ingredients for Mexican food, so thats a challenge....My vote is for Lily
