I just love food. I love to cook it, bake it, eat it, share it,grow it, talk about it, think about it!I always say that when I win the lotto I will do the Ballymaloe cookery course but hopefully this will be my ticket!I was lucky enough to go to Ballymaloe for a demonstration during the summer, I couldn't believe such a joyous place existed and fell immmediately in love. I am super late in my entry so I hope Cully & Scully will have faith in a girl who loves to cook and wants to get better.

These pancakes came about when I was working in a B&B during the summer and became legendary by the time the season was out. Its always a treat coming up with new variations of this crowd pleaser. The recipe itself is rather simple; good quality flour, eggs, milk, sugar and butter. Nothing fancy but really tasty. For chef factor I put them with classic bacon and maple syrup but also blueberry and caramalised banana are two other favourite accompaniments. Plate-licking good!
