A beef farmer's daughter, I've always been really lucky when it comes to quality produce (although I may not have always appreciated it when I was little!). I'm back in Ireland via 8 years in London, where I loved trying international cuisines. But I really think that you can't beat Ireland for great food - I love using local ingredients in ethnic dishes. Getting to the final and meeting Darina and Rachel would be amazing, winning ChefFactor would be like winning the lottery!

This lambshank tagine with jewelled couscous is a dish from one of my favourite cuisines - Middle Eastern. The lambshanks are slowcooked in the oven with spices, honey, tomatoes and stock for a few hours til the meat falls off the bone, then finished off with a dollop of harissa stirred in at the end. The couscous is simply made with stock, lemon, mint and parsley, pomegranate seeds, toasted pinenuts, black onion and seasame seeds added at the end - a fresh contrast to the hearty tagine.
