I work in Financial Services where things are governed by rules and regulations. Cooking is my escape from work, I can make things up as I go along if I wish!! Without it I'd be lost, however I'm no expert so I would love to take part in the Ballymaloe Cookery Course. The skills learned would remain with me permanently and that would be worth far more than €12,000 to me.
You have 500 characters to tell us about your dish:
This is my favourite dish and that is why I have chosen to enter the competition with it. The lamb is browned on a pan, it is baked in sauce made of tomato passata, spices and a garlic and onion puree. Chopped coriander and toasted almonds are sprinkle on top for serving. On the side I serve couscous which has been soaked in chicken stock and lemon juice, pomegranate seeds sprinkled on top add colour. Finally mint yogurt is made with Greek Yogurt with fresh chopped mint stirred through. Yum !!!
