Having had a passion for cooking from an early age there isn’t a dish I wouldn’t try. Although living in 3 countries has greatly influenced my cooking style, I haven’t been fortunate enough to have had any formal training. Each country has its own style of food, but I believe that Ireland has a vast range of cooking styles and ingredients that is hard to rival. I would love a chance to learn from the best and spend time with Cully & Sully to see how a successful food preparation company is run.

The rack of lamb, coated in olive oil, crumbed using pistachio nuts, chillies and fresh mint is placed in the fridge overnight allowing the flavours to get absorbed into the entire cut.The risotto contains wild mushrooms and Parma ham.The avocado and mango add a fresh flavour and contrast in temperature while the strawberry reduction adds colour bringing the dish to life for both eyes and palate.This recipe, with its ingredients that complement each other well, creates a truely delicious dish.
