I love to cook. I can follow any recipe but have difficulty coming up with my own ideas. This recipe is one of the few I can call my own. It would be a dream come true to have the opportunity to take part in a Ballymaloe cookery course, to indulge my passion and to learn to be more adventurous with food.
You have 500 characters to tell us about your dish:
The lightly floured pork fillet is pan fried in a little olive oil and butter. White wine, dijon and whole grain mustard are then added. Shortly before serving, cream is added. The meat is served over spinnach mash alongside seasoned roasted parsnips and carrots, buttered asparagus and sweetened baked apple. I serve the sauce from the pan on the side.
