There is nothing I love more than preparing and enjoying a home cooked meal,I get this from my Grandmother,growing up I always remember her in the kitchen cooking,baking etc.She has inspired me to cook,giving me tips,recipes,as well as picking up my own along the way.This opportunity would mean so much to me,I would love to learn how to be a chef,even getting the chance to cook in Ballymaloe would be an experience.I picked this dish because all of the ingredients are in season.
You have 500 characters to tell us about your dish: 
Crispy Duck breasts with sweet potato and celeriac mash,baby carrots,spinach and a red wine reduction.For the red wine sauce add bay leaves and shallots to a saucepan,then 500mls of red wine and port reduce to 1/10.Boil celeriac and sweet potato,mash and add butter and parsley.Score Duck breasts,season,rub with oil and Chinese 5 spice,add to a pan and cook to your liking.Wrap the carrots in tin foil,season,add butter and cook in the oven for 20mins.Cook spinach with some butter till wilted.
