I should win Cully & Sully’s Chef Factor because I would take full advantage of the experience in Ballymaloe. I believe in tasty home cooking that is good for the soul! I dream of being a ‘(wo)man with a van’ and specialising in something yummy that I can take around Ireland. I would also like to set up a small non-profit agency that runs free home cooking classes for families. My dish is called Julie’s Welly Beef and is a classic Beef Wellington. I love this mix of beautiful Wexford fillet beef, mushrooms, bacon and pastry. This is a dish that I only make at home in Wexford as there are always enough people to make sure it disappears quickly! I grew up eating my mother’s amazing cooking which I would classify as ‘feel good’ food. I love a dish like this that is so tasty, moreish and puts smiles on people’s faces!
