I love food, and since I was little watching Darina's tv shows and baking with Mum using all her well-thumbed Simply Delicious books, I dreamed I would one day go to Ballymaloe myself. Winning Cheffactor would really be a dream come true for me and I would relish the opportunity to become Ballymaloe certified. I love to surprise friends with cakes on any occasion, and I'm always experimenting.. even if things don't always turn out quite how I expected! Give me a chance to learn from the best!
You have 500 characters to tell us about your dish: 
My dish is based on the Ballymaloe Cookery Course cookbook recipe, Duck Roast with Honey. I seasoned the duck with honey, salt, pepper, garlic, thyme and rosemary, basting regularly. I made the gravy with the juices from the duck, flour, vegetable stock and soy sauce. Potatoes roasted in a little duck fat were extra crispy, served with beetroot roasted in balsamic vinegar, olive oil and salt, and carrots both fresh from the garden. The duck was bought from a nearby farm. Simply delicious!
