I love to cook! I'm at my happiest when I am pinching, sprinkling, chopping and dicing. More importantly I love to share the fruits of my labours with my friends and family. It would be a dream come true to work at something that makes so happy. Living so close to the area I have a great appeciation and respect for the Ballymaloe Cookery School and the assoicated Ballymaloe culture. What a gigantic stepping stone the course in Ballymaloe would be towards my dream coming true!
You have 500 characters to tell us about your dish: 
This dish is simple and reasonably quick to cook. With a hint of slightly Moroccan inspired spices, it has a wholesome and soul food feel to it. It includes readily available fresh produce that can be sourced from any supermarket or farmers market with spices that almost everyone has in their larder. The veg can be changed to suit whatever is in your fridge but I like the golden tones of peppers, carrots and squash. As with all stews the leftovers (if any) taste even better the next day.
