I want to win chef factor to realise my full potential,I have been interested in food for as long as I can remember and been an avid cook since I was 16, I recently entered Savour Kilkenny masterchef 2010 and cooked this dish and was lucky enough to win, the dish was judged by 3 proffessional chefs including Catherine Fulvio. To have the oppotunity to retrain doing something I really enjoy would be fantastic and hopefully start my own business employing others
You have 500 characters to tell us about your dish: 
A fantastic Lamb dish, cooked in 2 ways, a shoulder of lamb slow braised for 4 hours in a spicey stock, the meat is then flake off the bone and mixed with a blend of spices, wrapped in filo pastry and deep fried. The lamb fillet is then covered in Cummin and sauted. this is served with a fresh mint chutney and fantastic vegetable dal, with season local produce including Patato, carrot & swede. The secret is to balance the spices and combine all the complex flavours
