I should win because I would use the skills and knowledge gained to pass on the joy of cooking to kids. I have always loved the mystique of cooking- how a set of ordinary ingredients can be dramatically transformed into a dish to thrill the taste buds and delight the eye. Working in education I try to pass on the joy and magic of cooking to the kids I work with. I would love to win the Ballymaloe Course as I could do it in the Summer and pass on the skill gained to the next generation of foodies

My honey glazed duck dish is easy and quick to prepare. The minted-beetroot and spring onion salad and rustic rosemary potatoes perfectly compliment the natural sweetness of the duck. A bed of tossed watercress and baby carrots give colour and joy to the dish. All ingredients are Irish, local and organic.
