Because i have a keen interest in cooking, i am self taught through time spent watching cookery shows and trying out new recipes from cook books. I also enjoy visiting restaurants and would like maybe one day to open my own using locally sourced produce from within maybe a 50 mile radius of Galway. I have also always wanted to do the Ballymaloe House cookery course and I see this competition as the perfect opportunity to do so.
You have 500 characters to tell us about your dish:
My dish was inspired by my love of seafood. The herb crust on the hake was made using finely chopped shallots, breadcrumbs, olive oil, finely grated parmesan, chopped coriander and chives. The fish is then pan-fried over a medium heat with crust side down first in the pan to form a golden brown crust. The champ is made from adding a spring onion infused milk to the mashed potato and then pureeing some garden peas while adding some chopped mint. The dish is then garnished with chives.
