To be truthful cooking was not my first love but as I got older the passion grew. The time has come to spread my wings and venture into the world. I believe that the Ballymaloe coarse on my side would greatly improve my chances of getting were I want to be in a top restaurant in top part of the world. My inspiration comes from family who brought me hunting and fishing, from Rabbit to Pheasant, mackerel to mussels. At the time I thought this was a hobby, but now know its a way of life.
You have 500 characters to tell us about your dish: 
My dish is simple. Sea spaghetti is a very common variety of seaweed which in my opinion is perfect for cooking. In this case I fried it with garlic and a little butter. My fish is fresh Galway bay hake, oven baked to perfection. For my sauce a choose a lemon caper butter. Light tangy sauce with this hake is simply melt in the mouth bursting with flavor, and the spaghetti accompanies it perfectly. Sea spaghetti is rich in iodine, potassium, magnesium, calcium and vitemin C.
