I've been cooking since i was 9 years old & i love that with cooking there is always something new to learn both from your own experiences & from others. After leaving school i went to university but soon realised that working with food would be the only career that would make me happy!I work in a small cafe where i am given the freedom to be creative but i feel i have so much more to learn. i have always been a fan of the ballymaloe ethos and to do the cookery course would be a dream come true.
You have 500 characters to tell us about your dish:
On our farm we keep rare breed pigs, grow apples and there are several beehives in the orchards so i wanted to create a recipe to showcase the fab ingredients we have on our doorstep. This would be a delicious lunch dish or starter that is equally flavourful without the ham for vegetarians and its gluten free! The addition of garam masala to the dressing is a subtle twist on traditional flavours & the sweetness of the apple & honey offsets the stength of the goats cheese to provide great balance
