For me, food and cooking are a daily wonder and obsession! I am never happier than when in the kitchen! Nothing is more soothing than baking bread, or more tantalising than waiting for a slow-cooking stew to reach perfection! I am lucky enough to have a wonderful godmother who gave me a present of the 5 day course in Ballymaloe for my 21st birthday, and ever since it has been my dream to return and learn from the best! So to get this opportunity would mean the sun, moon, stars and more to me!

This dish was born out of a walk along the beach in Goleen, West Cork. My friends and I gathered mussels and clams (and the odd periwinkle!) as we strolled along the shore on a blustery Summer day, and when we got back to the house, I was put to work! With what we had in the kitchen, I conjured up this deliciously warming, creamy, tomatoey soup! With a hint of cayenne, a healthy dose of garlic and a generous helping of coriander, it was simply delicious! And it brings back wonderful memories!
