Following last year's Cheffactor,I got so many queries and requests for gluten free baking that it has made me so much more determined to win this year, but since I will probably be a few votes short of the 11,000 or so that made it last year,(just a few mind) I need Cully and Sully to pick me as their wild card so I can learn all I can from the masters in Ballymaloe to fulfill the dream of opening a coeliac friendly place. So please, pick me boys!!
You have 500 characters to tell us about your dish: 
One of the many family favourites, tried, tasted and enjoyed by all, made by melting gluten free chocolate and Irish butter, adding g/f brown flour, (so important for coeliacs and everyone) free range eggs, brown sugar and baking for 40 minutes or so. Delicious served hot or cold, altough they don't usually get a chance to cool down much here! So as Cully and Sully say themselves "totally Gluten Free" but for everyone to enjoy.
