My love of cooking only began a few years ago. I always believed that I'd never be any good at it because I never did Home-Ec in school. I discovered a children's cookery book in an second hall book stall with easy to follow diagrams and instructions and gave it a try. My collegues at work are now my guinea pigs as now I love to bake. "Tea time" at work is now "Time-Out" time. Winning Chef Factor would give me the confidence and skills to go forward and realise my dream of opening a coffee shop

My Lemon Bars are a big hit at work. I cream 200g butter with 250g caster sugar and add 300g S/Raising flour until it resembles breadcrumbs. The mixture is pressed into a greased and lined 20cm square tin and baked for 15mins @180(GM 4).It must be cooled before spreading 375ml (jar) of Lemon curd(raspberry jam is a delicious substitute)topped with 40g dessicated coconut and 50g porridge. Bake @160(GM3)for 30mins until golden brown. Cut into fingers(more for sharing!) and enjoy with friends :-)
