As a self taught adventurous cook with a passion for good food and an enthusiasm for entertaining, I love to create exciting new recipes with fervour and pride. While my passion is to develop & experiment with food recipes, my interest in cooking includes researching the components of dishes so as to enable me to have a better understanding of flavour & taste. If I won this competition, it would allow me to create with confidence, meals for the elderly, the diabetic, the child & the food addict!

This dish is highly nutritious. Mono-unsaturated fat from Olive Oil, Omega 3 fatty acids from Salmon, & served with Fennel Provencal which makes a heart healthy recipe. The mono-unsaturated fat in chocolate which contains oleic acid is also found in olive oil. It can also lower cholesterol levels. The fun of this experimental poached Salmon dish, with chocolate and fennel is the perception that these ingredients won't blend. The fusion of ingredients I assure you is scrumptious!
