I grew up in France and my parents had a bakery and bistrot, wanting to rebel against them I took a different career path which I regretted after a while. Being French, food is just a big part of me, and now I would really love to open a restaurant in Ireland. This prize would be the opportunity for me to properly find out about Irish food and professional cooking.

A twist on Beef Wellington recipe, this uses porc steak, on a bed of smoked ham, mushrooms and onions wrapped in puff pastry. Serve it with a simple green salad and homemade viniagrette. Food like my mammy used to make, simple but delicious!
