Cooking used to be a necessity and now it is my passion. You could find me in the hedgerow foraging for ingredients or perhaps in the charity shops scrounging for old, forgotten recipe books as I strive to make amazing meals for my family. As as stay-at-home dad to 4 kids under the age of 7, economy is just an important to me as variety and technique. I would love to open my own cafe someday and showcase the best of Irish cooking: local, fresh ingredients and of course, a crazy passion for food.
You have 500 characters to tell us about your dish: 
'Fidgety Pie' - a favourite in our household as the cold Irish summer gives way to a cold Irish autumn. I found the recipe in an old cook book, as the traditional English Fidget Pie - including pork, apples, potatoes and onions with a pastry crust. Instead of water I added this season's apple cider (homemade from our little apple tree) and added some thyme to give it an extra bit of heartiness. It is one of the only dishes my kids will sit still for and hence has been dubbed: Fidgety Pie.

Eric is shockingly good. My family visited the Flavins for a week from New York a year or so ago and we still speak of the wonderful food he created.
