I have always had a passion and love for food and all that goes with it – searching for new recipes, shopping for ingredients, cooking an impressive dish that makes family and friends go emmmmmm!! I believe when & where you can source fresh local produce, its the way to go – plenty of options out there these days! I’ve always wished for the opportunity to go to Ballymaloe to learn all the secrets of the trade… PLEASE PLEASE PLEASE make my wish come true and send me off to BALLYMALOE…PLEASE! :-)

My dish consists of feisty fresh fish(sourced at the local Galway Market),some sHpuds(the last of my father in laws crop!)&a WHOLE LOTA LUV!Poached the fish in some warm milk,lemon juice&parsley.Peeled,chopped&boiled potatoes(some for mashing&some to slice)Flaked all the fish into the pie dish,added diced carrots,celery,peas&corn.Cheesey sauce to smother.Piped the mash around the egdes,finishing with the “scale slices”.Serve with lemon wedges-a nice hearty meal for sharing on these cold eves...
