The combination of our high quality produce with traditional and new fusion culinary techniques is really exciting. By developing a food culture that we can be proud of we will boost the self confidence of the nation and develop a product that will attract much needed foreign visitors. I am ready to play my part in this revolution and I see the Balymalloe boot camp as the perfect first step

A simple dish guaranteed to lift your spirits and let you forget about negative equity and the IMF. A perfectly balanced combination of West Cork black pudding, roast sweet potato puree, a plump juicy seared scallop drizzled with sweet chilli oil & balsamic glaze all washed down with a glass of Alsace Riesling.
