I deserve to win Cheffactor because I have dreamt about doing this course for a long time and have driven my family crazy talking about it, trying to figure out ways I can afford to do it. Cully and Sully are offering someone an amazing opportunity and I can only hope that someone is me. I am incredibly passionate about food; growing, cooking, eating, smelling, everything about it! I have loved to cook and bake for as long as I can remember and I will work hard as I am incredibly eager to learn.
You have 500 characters to tell us about your dish:
My dish consists of slow roasted pork belly (rind on) which is rubbed with fennel and coriander seeds, accompanied by braised red cabbage, buttery leeks, crunchy roast potatoes and apple sauce. Its one of my favourite meals to cook and eat as the pork just melts in your mouth and there is nothing better than crispy crackling! Its a hearty and seasonal dish. The pork belly came from Richie Doyles Butchers in Wexford; they keep their own pigs and all the vegetables and apples are from our garden.
