I think about cooking all day long! I'm a "Stay at Home Mom" with two girls, 4 and 6yrs. We love to cook and bake together and I'm so proud to be able to pass on some essential life skills to them. Our evenings are filled watching Cooking programmes and we are all Masterchef fanatics!! My husband is my chief taster, but I LOVE to entertain family and friends also. It's so rewarding to see full, smiling faces at the end of my meals. I would really love to take my food to the next level now.

I source my meat from Nolan's Butchers in Kilcullen, Kildare where I live. (They recently won best butchers in Ireland). It is so important to me to work with the best quality ingredients. Fresh and seasonal are key to a good dish and my Roast Pork with Fennel Stuffing and Autumn veg mirrors this. The delicious crispy crackling is too good for words! It's a winner everytime! My Chicken Roulade is so quick and simple to make. It's a great dinner party dish too. Delicious, succulent and rich. Yum!

Fiona's chicken roulade is to die for. I'm the Dad and I have our grandaughters primed to tell me when Mum is cooking this dish so that Grannie & I can drop in for a "surprise" visit(usually around dinner time!)
