I love food: eating, cooking, experimenting. I know a little bit, but would love to learn a lot more. I am interested in food as something to enjoy and experience as well as it being a fuel for our bodies. I am also very interested in the health benefits of food for our bodies and mind. I would love the experience of training in Ballymaloe and using this in the future in my approach to food and cooking. So please vote, vote , vote......

Falafel feast:East meets West is a middle eastern dish with seaweed added, from the west of Ireland, for that Irish flavour!! It is comprised of 5 little dishes that can be combined as desired. There is a mixed seaweed houmous; tabbolueh; a salad of carrot, courgette and sea spaghetti with a tahini dressing; a yoghurt dip;and fried falafels. I layered all the above on to a heated wrap and folded. Then it is just a matter of keeping it all together long enough to eat, beware, it's a bit messy!!

new and inventive

presentation is superb and I am impressed with the novel use of the seaweed and spaghetti, both highly nutritious and underutilsed ingredients.
