I am from a small town in Brazil. I have been cooking dinners with my Mother since I can remember and I take my inspiration from her. I moved to Ireland 10 years ago where I am married with two children and my passion is to serve interesting, nutriential and finely presented dinners to my family every evening. I love to combine the traditions of Brazil and Irish cuisine with an additional twist. I would love to be a full time chef and bring my dishes to the public.

My dish comprises of boiled rice, prime beef sliced and layered with salt, homemade garlic and chilli paste wrapped around a sliced carrott. To enhance the dish I have included faned cucumber and crowned tomato filled with carrott and wine sauce. I have also used this sauce to garnish the dish.
