My husband James is a butcher “Nolans of Kilcullen”! Nolans has an abattoir, boning hall, processing and shop and as a result the most wonderful ingredients to work with...but sadly I am not a chef. I love food very much but I wish to be in a position to be able to cook confidently with all our produce, be able to share wonderful recipes with our customers and give them advice. I would grasp the opportunity with my two hands to train in Ballymaloe....I am already dreaming of the experience.Wow!

I live on the Curragh and see horses every morning as I commute to work, hence the name "Champion Chase" burger. I have chosen mostly ingredients from the shop: Nolans Steak Burger with onions,Janets Red Onion Marmelade,Ardsallagh Goat's Cheese, rocket lettuce,cherry tomatoes,avocado, Nolan's Home Cured Rasher & the piece de resistance, Nolans 2010 award winning 2010 Black Pudding. This dish takes only a short time to prepare,appeals to all ages and above all else is unbelievably tasty!!
