I think about food all day, immediately after eating one meal, I am already planning the next. I cook three meals a day, breakfast being the only constant in terms of ingredients. I cook seasonal food mostly with locally sourced, Irish grown-ingredients. To attend the 12 week course at Ballymaloe would be the best way for me to practice and improve on all my self-taught techniques (and correct my bad habits), to learn from the real experts and gain valuable knowledge to aid me in my dream.
You have 500 characters to tell us about your dish: 
This is deliciously simple, made with organic or free-range chicken drumsticks, fresh garden herbs - parsley, sage, thyme, marjoram, whatever you have available, butter and the juice of a lemon. My two little boys eat these in complete silence, with juice dribbling down their chins, pulling the soft, warm meat off the bone, mopping up the lemon-herb butter with crusty bread until there is a not a drop left. Producing home-cooked, home-grown food for my family is the ultimate nurturing activity.

I use Elizabeth as my recipe library, whenever I want to come something special I email her for a recipe. She always cooks it herself before she sends it to me so can always offer all the practical tips. The food always goes down a treat with everyone. Beautiful, nourishing, homely, Irish food... coulddn't recomend highly enough!
