When I was sixteen, I joined a fishing trawler and was immediately promoted to cook (as well as doing deck work). I have cooked and tasted fish fresher and tastier than any land-lubber could possibly imagine. I have made casseroles and stews on a small solid fuel stove on hundreds of occasions for ten ravenous men. I have tales to tell and dishes to cook. I can talk and I can cook. Yes I can!

This dish is Parmesan Chicken with Autumn Vegetables.The ingredients are fresh organic plump breasts of chicken,Bread Crumbs, Parmesan Cheese, butter,thyme and parsley.
The vegetable are Carrots and Parsnips Smashed not Mashed (It's not baby-food). Smashing gives texture and more vivid colour and this Vegetable is all about colour. The sweet smell and divine taste are bonuses. Chicken is slow cooked with all the ingredient's and I have never seen a single piece left over. Perfect for a party.
