I should win Cheffactor because my chosen dish has some of the best Irish and locally sourced ingredients. The opportunity to complete the Ballymaloo cookery course represents a once in a lifetime chance for me. It would enable me to begin a career as a professional chef. I am passionate about food and cooking and want to be able to make a living from it. I work in financial services but food- whether reading about it, cooking it and of course eating it, is what makes me truly happy.
You have 500 characters to tell us about your dish: 
My dish is simple, tasty and full of Irish ingredients. It includes some of the best and most loved Irish foods; Clonakilty black pudding, Cashel blue cheese served on crusty bread with homemade apple chutney, organic lettuce leaves and topped with a farm fresh poached egg. It proves that the best food can be found, assembled and cooked very easily and by anyone. It can be eaten at anytime of the day as it makes the perfect brunch, starter or night-time snack. Try it for yourself!

Ed you have inspired many people to be more passionate about what they eat. Through your own enthuasiasm for exotic and exciting work day lunches (in the unmentionable workplace!) i can no longer stand in line for Centra roll, a Spar sandwich or even an all you can eat buffet! The highlight of a very dull day was always 'What has Ed got for lunch today'? You deserve this Ed, wiching you all the best xxxxxx
