I prepared an Irish infused Spanish paella, following the traditional spanish recipe which includes spanish chorizo, smoked paprika and saffron. To add an Irish charm, I used fresh prawns from Dublin Bay, as well as fresh peppers, onions and garlic from my local farmers market. To this I added fresh cod, salmon and paella rice. The dish is topped off with a squeeze of lemon juice and some fresh flat-leaf parsley. Its perfect for sharing with friends and family, and a good bottle of rioja wine!

Zoe's meals are absolutely delicious all the time. I love how zoe always adds her own style and edge to to each meal she prepares and the fact that she uses only the freshest ingredients is great as its always healthy!
