My first adventure into cooking, aged 10 saw a poor chicken get roasted for 3 hours! He deserved better.. Over the years my timing has improved! I love all things cuisine and experiment with different influences. I get massive pleasure from cooking for family and friends, even catering for parties. I'm also a keen baker with a sweet tooth! What a dream winning Cheffactor would be..the opportunity to get trained in Ballymaloe, incredible! Then I'd open the cafe I've always dreamed of.
You have 500 characters to tell us about your dish: 
I love the hake cooked this way because it's so crispy on the outside but delicously moist and delicate when you break into it. My batter has beer, tumeric and paprika in it. The pea puree has a small Thai influence with some green curry paste and finished with double cream. It's a classic combo really. Yummy with a wedge of lime.
