I sleep, dream, read, watch & do cooking! I have been a homemaker for the last 6 years and have had to put my goals on hold. I dream of running my own catering business and feel that I've learnt all I can from books and experimentation. Winning this competition will not only help raise me from an amateur to professional chef but will also let me learn about the business from four of the most respected people in the industry. In short, I need to win because this has, and always will be, my life!
You have 500 characters to tell us about your dish:
The crab cakes are bursting with fresh & zesty flavours like lemongrass, corriander, lime & chillies bound together with locally grown floury potatoes. The claws are dipped in flour then a mix of egg, fish sauce & spices. Next they’re coated in a lemon zest & hot paprika breadcrumb. Both cakes & claws are shallow fried until crisp & golden. They are served with homemade citrus mayo & a sweet chilli & vinegar dipping sauce. Wash them down with a frosty beer or a cold glass of good Prosecco. Bliss

I love crap claws the whole way through my 1st pregnancy I craved them.

Thanks so much for your positive comments and very kind words. I have been a big fan of crab claws since I was a child. I did laugh though when you said you loved 'crap' claws, I guess you meant to say 'crab' or maybe the ones you had weren't very good!

These look amazing Nina! I am especially impressed with how golden and crispy the claws are. Whenever I shallow fry things turn out a bit soggy and greasy! Good luck with it, hope you win

Looks amazing, most delicious by far, I totally dislike these competitions that illiminates real talent and ability because of the voting technique, I hope if your true cooking talents and mouth watering presenation are not recognised in the voting that the judges recognise true cooking ability and presemtation and choose to put you through, Best of Luck to you!!!

I really shouldn't be looking at sites like this in my condition so late at night... Best of luck... Food sounds and looks yummy... Cully and Sully do really nice savoury food... no wishy washy flavours here... I would say your on a winner. I just wish I had some in my fridge right now...
