Well I have no whimsical foodie beginnings I didnt spend hours helping granny in the kitchen, In fact like many wee children I would forgo the lovely casserole Mammy made for a fish finger sandwich..one for breakfast lunch & dinner if I had had my way, but here I am now a food freak! I am happiest in the kitchen, at the farmers market or watching Rachel, Clodagh or Corrigan!. I’ve had dreams of attending Ballymaloe I hope I get the chance because”Laughter is brightest where food is best”

My Cork Gumbo~ Fry off the wonderful Schull chorizo in some oil until it has some nice colour..make a nice dark roux adding some flour to the fatty oil left over...throw in some beautiful green peppers, celery, fennel & onion from the Mahon farmers market. The homemade stock is simmering with some fishy bits in there. We add bay, thyme then garlic, tabasco, cayenne and okra, stock goes in and then our Fresh crab, prawns & chorizo..simmer away..magic!
