Food has always been an important part of my life. From an early age my mum and granny taught me how to cook. I am a member of the NE Ireland Slow Food Group, work for a small food company and recently completed a PhD on food innovation. My long term ambition is to own my own restaurant where I can showcase local produce combining both traditional and innovative approaches to Irish cooking. Food is my passion and winning Chef Factor would allow me to be 1 step closer to realising my ambition.
You have 500 characters to tell us about your dish: 
This dish offers a modern twist on the classic Irish meal of a 'meat and two veg'. The colcannon brings a seasonal element to the dish and the malt flavour from the Belfast ale gravy compliments the sweetness of the honey roasted carrots. I love the vibrancy of the savoy cabbage in the colcannon, the fact that the fillet beef melts in your mouth and the depth of flavour the gravy gives to the dish. The dish has all the elements of a good Irish meal; meat, potatoes, vegetables and alcohol!

Even how Clare describes this dish gets my mouth watering! The food in her photo looks fab and manages to make a rather traditional meal seem somewhat unique to the tastebuds! I love the passion she displays for local produce and for showcasing what the Irish have to offer when it comes to food - move over Italy as Clares colcannon will put your pasta to shame!! I wish Clare all the best in reaching her dream of owning her own restaurant. She definately has the CHEF FACTOR!!!
