When I'm finding life a bit stressful or I’m feeling down,my day dream keeps me going...One day,I will open my own little eatery. Cosy &inviting, a place where one can get tasty,fresh &reasonably priced dishes made with local,seasonal produce
To make that dream a reality,I need the skills & confidence that only Ballymaloe Cookery School can give me!Cully & Sully please make that day sooner rather than later!

This is my favourite winter dish! Loaded with yummy,healthy ingredients,it is quick &easy to make. It is a tomato based stew with prawns &monkfish (fresh from the waters around Beara) &contains fresh chillis as well as garlic,onion,parsley,a little orange zest & a generous splash of white wine.I serve it with baby potatoes but is just as good with garlic toast.My husband &I have a wee veggie plot this year &I was thrilled to be able to use tomatoes,onions & parsley from the garden in this stew
