My dish of seared tuna and red onion, kiwi salsa is light, fresh and flavourful. It could be served either as a starter or main course. The tuna is marinated in lime juice, lime zest, crushed cumin seeds, chilli flakes, salt, pepper and a little olive oil. The salsa is made from red onion, kiwi, avocado, cherry tomatoes, red chilli, fresh chopped coriander and mint, dressed with fish sauce muscovado sugar. For a touch or Irishness there is a golden pan seared potatoe cake.

I have always had a great interest in cooking & I take great pleasure in cooking for loved ones to bring a smile to their faces. In these times of unemployment, doom & gloom my salsa should bring a taste of c-a-r-n-I-v-a-l to your life.I often wonder what it would be like to work in a professional kitchen. Id love to win this wonderful competition that the great Cully&Sully have put out there&hopefully go on to learn new skills from our very own top cookery school & restaurant in Ballymaloe!
