The 12 week course at Ballymaloe is something I've long wanted to do but never in my wildest dreams did I think I could get the opportunity to go.I love to cook and bake for my friends and family but it's not enough because,for me,cooking is more than just a hobby and I believe a future with food is definately my calling.Ballymaloe is one of the most distinguished names in Irish cooking and dedication to quality and locally sourced Irish produce is something I would be proud to be involved in

For my dish I chose to make "Chocolate Seonbread". It is of course Shortbread, something I make well enough that friends now ask for it specifically!I have loved to bake since I can remember-perhaps from watching both my grandmothers making scones or apple tarts. The shortbread itself is made using only 4 common ingredients and easy to whip up at short notice but is a lovely treat with tea,coffee or as a gift. I use salted Irish butter as I think it compliments the chocolate topping beautifully.
