A few years ago I was lucky enough to attend a two day course at Ballymaloe and spent two of the greatest days ever. I got up early each morning and helped churn butter and picked tomatoes and herbs in the poly tunnel for soup and pasta sauces. Loving food and cooking the way I do, I loved the whole ethos of the school and knew that I would like nothing better than to be there for the three month course. I am still waiting for that day...
You have 500 characters to tell us about your dish: 
Some days you feel like soup, some days you fancy a stew and some days you just NEED chocolate. This desert has all the best bits of chocolate without being too rich – so you can eat it all – starting on the left with a chocolate meringue stack, followed by a dark chocolate truffle torte, then comes a white chocolate mousse and finally a chocolate tuile with homemade white chocolate and chilli ice cream, all served up with a berry coulis – heaven on a plate.
