I love cooking - I'm always cooking. If it's not breads, mains or starters, it's preserves with wild ingredients or Chillies or Tomatoes grown in my own garden or home made apple juice. I love creating dishes for my family that cost a fraction of what you'd pay for them in a restaurant. I get the most satisfaction from seeing family & friends licking their plates clean at the end of a meal.While "not bad" at cooking, I could well do with "professionalising" and where better that at Ballymaloe ?!

This "plate licking" dish is guaranteed to have you looking for extra spuds to mop up all the sauce. Pictured is a breast of chicken altough I prefer the leg & thighs - more succulent. The depth of flavour comes from onion and orange oil from zest and the smoothiness from the cream-a 35 minute wait for contentment. Pan browned chicken is added to simmering orange juice and onion with zest and finished with cream & sieved before serving with glazed carrots, French Beans and Garlic Spuds. YUM YUM!

Nice one Robert looks nice but sorry there's always a but those greens look a tad over cooked next time try blanching and refreshing your greens earlier and reheat them in boiling water remember keep the lid on it'll keep your greens green! other than it looks lovely nice presentation good luck with the competition.
